Whilst national demand for our county’s cheeses was severley impacted, restricted shopping to supermarkets meant that sales of block cheeses, mainly cheddars and hard cheeses surged ahead, These mainly ‘industrial’ cheeses, factory made and mass produced can be made with synthetic starter cultures. These ‘starters’ when added to the mlk in the cheesemaking vat, can influence the finished cheese in such  a way that it  matures quicker and tastes sweeter. The character of our wonderful Double Gloucester is replaced by a slab of factory blandness. There really is no substitute for the real thing
